the smoker





While the pork dries, we put the finishing touches on the smoker, which we built out of an old file cabinet covered in Pokeman stickers (it was Kam's). We got a little electric burner that sits in the bottom drawer, to heat the pan of the hickory chips that provide the smoke. A series of holes in the drawers allow the smoke to pass up through the cabinet. A larger hole in the back at the top is where the smoke will exit, through a vent.

Oh, my god! Does the meat touch the metal? I'm talking health issues here. But then, the smoke as Kam's mother points out is a hazard itself. I'm just closing my eyes and hoping for the best. (and if I was there I would be in line to test the end product, so I guess I am not all that worried.) Warmly, Kam's Dad

Kam'd dad, we took this issue seriously. You'll notice in some of the photos that we carefully lined the cabinet with tin foil.

A filebox smoker? Brillant! And my favorite (not forgetting presentation is important) is the Pokemon stickers.
