Bacon Secrets Discovered!
I feel like I just split the atom. I just had the most delicious Horowitz Bacon. Yes that is right Bacon, not Bacon Chops. Mmm that sweet smoky flavor is still on my lips.
So what is the secret you ask?
1/ We cut the sides of pork in half to smoke them, we then cut them in half to divide the "tangy friendship" ... well I cut mine in half AGAIN. Yes this does lead to a shorter strip of bacon. However it gave me greater control in the cutting department. Now I was able to thinly and evenly slice the bacon.
2/ To cook it I placed it on a rack over a baking sheet. I then popped that in a cold oven, turned the oven to 400 and waited for genius to emerge.
That's it, you now know the secrets to crispy Horowitz Bacon. Good Enough for a Gentile.

Kam, do I understand correctly that you are making your momentous third cut perpendicular to the second cut? This is why we need photographs.

The first and second cuts were parallel. Each cutting from top to bottom (as it existed on the pig).
I made my third cut perpendicular to the second cut. This would amount to front to back.
I then sliced the bacon perpendicular to the third cut, paralell to the first two.

I too have tasted the greatness of Horowitz Bacon(tm) and bacon chops. Kam had mentioned the epic task of bacon construction and I journeyed many a mile under arduous conditions (my cars tape player was on the fritz) to take part in the bacon fete acommpli. My cunning plan of arriving just as the bacon was leaving the smoker was shattered as the baconneers were running behind schedule. My evening plans and immediate hopes for bacony goodness dashed I found solace in several pints of dog fish head. After regaining consciousness from a drunken confrontation with the boxing rabbi my patience was rewarded with several tasty bacon chops and even the gifting of a decent sized slab of Horowitz Bacon(tm) which has subsequently been used in a tasty egg and bacon sandwich.
Overall I must say that Horowitz Bacon(tm) is not only a smokey flavorful symphony for the taste buds but also nourishment for the soul.
